Vegan Banana Snickers Pops | RECIPE and VIDEO

Who doesn't love a Snickers?



These pops are inspired by this classic candy (one of my childhood favs!). Except these are plant-based AND healthy. They're also frozen which is perfect for the Indian summer weather.


The star of the recipe is the date caramel made purely from soaked dates, sea salt, and vanilla. It's a MUST TRY.


The best part is they're super simple to make. You won't be missing the real thing with these around.


Step-by-step video of how I made these:



INGREDIENTS


Date caramel

  • 250 g medjool dates (I use Urtekram)

  • 1 vanilla pod (the inside beans only)

  • dash of water

  • pinch of sea salt


Chocolate coating

  • 85 g dark chocolate (1 chocolate bar)


The rest of the ingredients

  • 1 bunch of ripe, spotted bananas

  • 1 handful of crushed, roasted peanuts

  • flaked sea salt


INSTRUCTIONS

  1. Soak the dates in hot water (not boiling) for 1 hour.

  2. Drain the water and blend all of the Date Caramel ingredients together.

  3. Cut the bananas in half and put bamboo skewers or popsicle sticks through them.

  4. Spread the caramel sauce on the bananas. Use a knife to smooth it on softly, so that the bananas don't fall off the sticks. Sprinkle the crushed peanuts on them.

  5. Place the banana pops on a plate lined with parchment paper and freeze until frozen through.

  6. Melt the chocolate via double boiling or another method.

  7. Dip the banana pops in the melted chocolate, or drizzle the melted chocolate on the banana pops. Whichever method works for you! Stick the pops into a holder of some sort to dry (I used a banana - see video!). The cold banana pops will make the chocolate harden, so quickly sprinkle some flaked sea salt on them before the chocolate fully hardens.

  8. Seal the pops in a container lined with parchment paper and store in the freezer, or enjoy right away!
