Pancake Skewers | The Best Vegan Pancakes

I'm all about delicious pancakes, where no one can tell if they're vegan or not. I'm also all about making them cute and fun. Cue the Pancake Skewers, featuring the best tasting vegan pancakes!

This recipe includes the best vegan pancakes, some fruit, chocolate sauce and/or maple syrup, and some wooden skewers. It's perfect for a summertime breakfast/brunch picnic for you and your favorite people!

Your pancake batter should look something like this. Airy, bubbly, and emulsified for the fluffiest pancakes:


Makes about 10-12 skewers


  • 1 cup all-purpose flour

  • 2 tablespoons cane sugar

  • 1 tablespoon baking powder

  • 1/4 teaspoon salt

  • 1 cup plant milk of choice

  • 1 tablespoon apple cider vinegar

  • 1 1/2 teaspoon vanilla extract

  • Optional: a sprinkle of chocolate chips on some

  • Vegan butter or neutral oil for cooking

  • Berries and bananas

  • Chocolate sauce, and/or maple syrup to serve


  1. Place the wet ingredients in one bowl, and the dry ingredients in another. Mix the ingredients in each bowl thoroughly.

  2. When mixed separately, combine the mixtures in each bowl together and mix thoroughly.

  3. Heat pan on medium-high heat and add about a teaspoon of vegan butter or oil.

  4. Reduce the heat to medium-low and scoop in about a teaspoon of batter for each mini pancake. Add a few chocolate chips to each if you'd like.

  5. Cook until golden on each side and repeat until the batter finishes.

  6. Slice up your favorite fruit (I like having berries and bananas with pancakes) and arrange on a skewer the pancakes.

  7. Drizzle on some chocolate sauce and/or maple syrup and enjoy!
